
Hawaii being my home, I can’t help but include some Hawaii ‘horse and Cowboy‘ culture here on Horsealicious. My father was born and raised in Hawaii, but I don’t think he ever rode a horse; however, he loved ‘riding the water’ in a sailboat!
Hawaiian women have always loved horses and horseback riding; however, they did not want to ride side-saddle, in spite of the early missionaries. Thus, they modestly hiked up their skirts to ride through the country, eventually decorating themselves and their horses in beautiful flower blossoms strung or woven into lei for special occasions.

Maybe when my cousin, Judy Henderson, in Hilo sees these photos she will send me some photos of her granddaughter, Dember, who is a beautiful pa’u rider. I would love to post some family pictures here [Judy!].

North Carolina is home to quite a spectacular cutting horse farm, Matthews Cutting Horses. The owner, Jeffrey Matthews, and I go back many years to when his Grandparents and his Mother were alive and thriving in what was once a major hog and turkey operation, Carroll’s Foods, in Turkey, North Carolina.
We met in the world of Quarter Horse halter and western pleasure shows back when he was working with Tommy Manion, and have remained friends for many years. I remember the property his cutting horse farm is built on before there was anything on it. The development of a horse farm was always his dream and intention.
His two stallions stand in Texas at Oswood Stallion Station: One Time Pepto and Cowboy Cattylac. He keeps an ever-changing number of mares and beautiful foals at his North Carolina farm. (Photos courtesy Matthews Cutting Horses.)
Okay, most of you know I love horses, Cowboys and the ‘Western lifestyle.’ I love American Cowboy magazine too. Several years ago I wrote their Editor, Jesse Mullins, Jr., complaining when they appeared to deviate away from the real Cowboys, especially the living cowboys, in their publication. Can’t say that anymore!
The CowboyDay.com website was created by American Cowboy magazine:
“expressly for the purpose of promoting and supporting all aspects of cowboy and Western culture, and generating public awareness and support for the passage of a permanent National Day of the American Cowboy holiday.”
National Day of the American Cowboy is the 4th Saturday of every July. This year the date is July 25th. Consider me a National Day of the American Cowboy Ambassador.

We are very lucky to have a miniature horse farm here in Waynesville NC, and I love driving by there, especially during foaling time. Mr Friday visit rendered a pasture full of mares and their babies, all in various states of ‘foaldom.’

One of the cookbooks I have carried around for many years is “Cowboy Cooking” which is comprised of recipes from the Cowboy Artists of America. Who wouldn’t love a Bald-Faced Sandwich, a Cowpoke Sandwich, or some Cow-Chip Cookies? Many of the recipes can be cooked over a campfire too, which could come in handy when I finally move into an Airstream.
The Texas Cowboy Kitchen: Recipes from the Chisholm Club, is another favorite … by Grady Spears, who also wrote A Cowboy in the Kitchen: Recipes from Reata and Texas West of the Pecos. Here is a link to all 8 Grady Spears’ cookbooks.
Wondering how to cook those ‘mountain oysters?’ Cowboy Tendergroins! After castrating your bull calves, take their ‘oysters’ (approximately 6 per person), clean them down to the membrane, throw them in a hot griddle or skillet coated with some Mazola oil, season with a little garlic salt to taste, and cook them until they pop open. Serve hot!
